About the course
In this first of a planned series, we will look at some basic butchery techniques which are useful to know.
We will look at how to prepare chicken for grilling (2 variations) or sauté/casserole. We will cover a good, all-round butcher’s knot and basic meat tying technique that is suitable for almost any home situation. A demonstration of butterflying of lamb leg is also covered.
You will have the opportunity to cook a chicken dish (grilled with Tandoori spice) or Mexican style casserole. Omani spiced lamb legs will be cooked over the char grill as part of the class.
All ingredients are provided – bring yourself, some friends and laughter and learn to make new and exciting food in the first-rate kitchen facilities of NorthTec’s Apprentice Restaurant!
