About the course
The purpose of this qualification is to provide the retail meat industry with people who have the knowledge and skills to operate independently as trade qualified butchers.<br /><br />Graduates will be able to produce and merchandise a range of meat products in compliance with legislative and food safety requirements. <br /><br />The qualification is designed to recognise trade essential knowledge and skills with optional strands that reflect areas of specialisation within the retail meat industry.<br /><br />The Carcass Breaking and Boning strand recognises the skills required to process carcasses to produce meat cuts. The Curing and Smoking and Handcrafted Small Goods strands recognise the specific skills required to produce these types of meat product. <br /><br />This qualification is designed for people working in the industry and will typically be achieved in the workplace environment whilst completing a New Zealand Apprenticeship
Entry is open, however it is recommended candidates hold the National Certificate in Educational Achievement (Level 2) [Ref: 0973] or equivalent skills and knowledge.
