The NZ Certificate in Cookery Level 4, is for students who wish to progress from basic to complex food preparation skills, techniques and knowledge. This programme will enable students to learn in-depth culinary techniques in areas that include cold food presentation, hot desserts and pastry dishes.

Along wth cooking the student will learn food safety, nutrition, catering, kitchen, cost operations and menu planning. The course will prepare them for working as part of a team across all areas of a commercial kitchen.

In this programme you will learn the skills you need to gain confidence and knowledge in:

  • Foundation
  • Cold Food Presentation and Nutrition
  • Preparation, Cooking and Finishing : Stocks, soups, sauces, vegetables, fruits, pulses
  • Preparation, Cooking and Finishing : Rice, grain farinaceous products, egg dishes, hot & cold desserts, puddings
  • Preparation, Cooking and Finishing : Fish and shellfish
  • Preparation, Cooking and Finishing : Bakery products
  • Preparation, Cooking and Finishing : Meat, poultry and offal
  • Industry Experience
